When we came across this mouth-watering Oatmeal recipe on FoodNetwork.com, we thought it would be a perfect way to warm up on a cold morning. When we realized it could be made in your standard dorm-room microwave, we KNEW it would be perfect! All you need are a few ingredients, about 15 minutes, and voilà – you’re ready to enjoy this delicious, fiber-rich breakfast.
What You’ll Need:
1 apple, preferably McIntosh, cored and coarsely chopped
1 cup rolled oats
1/4 teaspoon ground cinnamon
Pinch salt
2 cups water
2 tablespoons pure maple syrup
1/4 cup toasted pecans
What to Do:
Combine the apple, oats, cinnamon, and salt in a large microwave-safe bowl and stir in the water. Cover and seal with plastic wrap or a tight fitting lid and heat in the microwave on high until apples are soft and most of the liquid is absorbed, about 8 minutes. Stir in the maple syrup. Divide between 2 bowls and top with the nuts. Serve immediately.
Pair with some orange juice or a hot cup of tea and you’ll be ready to take on the day!
