Better Breakfast Month – PB&B Wrap

This month we’re bringing you plenty of reasons to incorporate a healthy breakfast into your morning routine. Last week, we whipped up a yummy Fruit & Nut Yogurt to help you start the day off right and this week we’re back with another delicious breakfast idea. SparkRecipes combined two of our favorite foods (peanut butter and bananas) into one tasty on-the-go wrap. Yum!

What You’ll Need:

1 Banana

2 Tbsp Peanut Butter (I prefer crunchy)

1 whole wheat tortilla

What You’ll Do:

  1. Spread the peanut butter on the tortilla.
  2. Peel the banana and roll it into the wrap (peanut butter on the inside!).
  3. Cut the wrap into halves. Enjoy!

Because bananas are packed with Vitamin A, iron, and potassium, they are a fantastic source of natural energy. This super food is the perfect way to kick start your day!

Dish It: Dulce de Leche Cheerios Parfaits

There is nothing like a big bowl of Cheerios with milk in the morning or a big serving of yummy vanilla yogurt. Well, this recipe – coming to us from the Betty Crocker website – combines both favorites into one low calorie dish that’s ready in only 10 minutes!

What You’ll Need:

  • 2 Medium rip bananas, sliced (2 cups)
  • 4 Containers (6 oz. each) Yoplait Original Fat Free French vanilla yogurt.
  • 2 Cups Dulce de Leche Cheerios cereal
  • 1 Cup sliced fresh strawberries, if desired

What You’ll Do:

  • In each of 4 parfait glasses, layer ¼ cup of the bananas, one half container of the yogurt and ¼ cup of the cereal; repeat layers. Top each parfait with ¼ cup strawberries; serve immediately.

Dish It: Five Minute Ice Cream

Ever crave ice cream on a hot and sticky day, but don’t want to spend much money? Lucky for you, we’ve got an ice cream recipe that takes 5 minutes and only has 4 ingredients! Don’t have a blender in your dorm? Why not make it at home for your parents! Keep reading for this refreshing and easy ice cream recipe.

What You’ll Need:

1 package frozen fruit (I used raspberries)

1/2 cup sugar

2/3 cup heavy cream

1 tsp vanilla

What You’ll Do:

  1. Combine the frozen berries, sugar, cream and vanilla in a food processor or blender. Process until the fruit is roughly chopped and mixture resembles ice cream.
  2. Eat now if you can’t wait, or freeze for firmer texture.

Dish It: Guacamole

With Cinco de Mayo around the corner, we’re feeling extra festive. What better way to celebrate Mexican culture and heritage than with some delicious guacamole? This dish – often classified as a “sauce” – dates back to the ancient Aztecs who were very vocal about their preference for avocados. Traditional Mexican recipes have only a few ingredients but lack nothing in terms of flavor. Wow all of your friends and floor-mates with this easy recipe from Food.com.

Grab some Tostitos and you're all set to enjoy this festive dish!

What You’ll Need:

-5 large avocados (some people claim that Hass avocados are the best, but it’s up to you)
-1 medium white onion (diced)
-3/4 cup loosely packed cilantro (chopped finely)
-1 large tomato, diced
-salt
-Optional: finely chopped jalapeno, lime juice

What You’ll Do:

1. Cut avocados in half and throw out the seeds then scoop into a bowl. Slice the halves then mash them until you are happy with the consistency. Some people suggest adding some lime juice to prevent browning but this is optional.

2. Add chopped onions, tomato, and cilantro. Stir gently to mix all of the ingredients together. Stir in the chopped jalapeño last and try small samples to determine how spicy it is. Add more if you like it spicier.

3. Serve with tortilla chips or add it to your favorite Mexican dish. Delicioso!
